responding for my son (formerly of BJ's Redwall Fan club)

Martin the Warrior era, definitely.
It's easier to get stronger enemies (as compared to Cluny's armorless rats who had less training) and the castle would nicely fit the traditional dungeon-raiding rpg's.

Also interesting would be a Long Patrol/Marlfox rts (awesome hares with spears!), but readership is smaller.
 
Can I suggest something?

Whenever I've done Redwall RPGs, we haven't gone with any specific book or anything, we've just gone with a generic Redwall setting with our own unique characters, filling specific roles wherever we wish.

Like, take me for example, I'm always a hare maiden, Meg Longears, chocolate brown complexion, cheerfully demure, always ready for a feast. Just stick me in Redwall with other characters and see what happens.

But if you want to go with a specific book, then that's fine too, I don't care which but I'd like to join :p
