In my opinion it would have been impossible, now after so many years, to recreate the original series I think there would have been a very large uproar if they tried to do that. I agree with Inky they can have new adventures and sequels without have to worries about making sure that their plots don't contradict the original story. My dad thought that was very clever and I agree. As I have said though I have not watched much of the Original Series, if I had I might feel the same as you Aravis, who knows.
They can have new adventures, but they shouldn't use original characters. They could have had an audience, however small, for a Voyager film, but it's a little late now since the cast is much older. They could have done films based on the books (which I think would have been a pretty good idea myself), or they could have done more TV series, such as Star Wars has done with The Clone Wars (which has made a lot of fans extremely happy, since they've gone back to the beginning of the War and told a lot of back story/exposition).
They also could have toned down the language in the movie; Kirk never used b.s. in the older films (he did use others, but frankly, that's mild compared to today's films). Spock was much too human (something I thought was never done in TOS, not to the extent here). Besides...as I've said elsewhere in this thread, they destroyed 3 VERY important things in the universe: Kirk's father, Spock's mother, and Vulcan. If they had wanted to kill Kirk's father when he was older, okay, fine. But Kirk's father
shaped who Kirk became later on in the TOS. Same with Spock's mother, Amanda. And Vulcan? It was the first planet that made contact with Earth after Cochrane's warp flight, and to destroy that planet meant that you destroyed a piece of Trek history. It wasn't just a planet. Vulcan was an integral part of the Alpha Quadrant and how it formed. And don't even get me started on how it affected the future of every other single event in Trek history! Without Vulcan, you have no Tuvok, nor the Vulcan from Enterprise (I forget her name). Same with Cardassia, Kronos, etc... That's what I mean by destroying the very fabric of Trek. It's perfectly fine to go back and do a "what if". But when you destroy the things that made the characters what we came to know and love, you aren't making Star Trek. And I'm not in the minority on that. And don't even get me started on Kirk getting promoted immediately to Captain.
